about-brianBrian grew up in NYC and spent his summers in North-Carolina with the low & slow smoked authentic southern kitchen, culture and music.
From 1993 through 2004 Brian has worked in the music industry both in NYC & Amsterdam for such Major labels as Def Jam, Chrysalis/Mercury & Anti/Epitaph Records doing A&R and International Marketing.  In addition, he has worked with the leading concert promotion company in NYC, Delsner/Slater Entertainment, booking such venues as Mercury lounge, Bowery Ballroom and Irving Plaza ..
In 2005 Brian turned his attentions to cooking, where he meet Jaymz and began working at restaurant/club 11. From then/there he found another passion and has developed it into a successful career working for such Amsterdam restaurants as Toscanini, De Kas, Open and Café George.  In 2010 Brian returned to NYC after 10 years to strengthen and  further develop his Kitchen leadership skills in such Michelin star restaurants as A Voce, South Fork Kitchen and Iron chef, Marc Forgione, where he lead as a sous chef.  In addition, he was also a private chef and created a hugely successful brunch in Brooklyn at The Tradesman (a farm driven bar/café).
Finally in 2013 Brian returned here to Amsterdam to start his own restaurant based on the HUGELY successful authentic BBQ movement that has blossomed in NYC & Brooklyn. After a year of exploring venue options, Brian has found a perfect partnership to develop his dreams of combining the food/bar world with the music industry with De Marktkantine! He looks forward to sharing in the success of the whole project and exposing Amsterdam to a new way of thinking about BBQ!!
